Collard greens are cruciferous vegetables (includes kale, broccoli, cabbage etc.) which are good source of Vitamin B1, B6 ad iron. They also contain Vitamin E, protein, magnesium, Folate, Omega Fatty acids and potassium. This vegetable is a staple in many dishes and adds healthy nutrients to any meal. Collard green contains high dietary fiber and antioxidant known as alpha-lipoic acid, which lowers the glucose levels, increases insulin sensitivity and prevent oxidative stress induced by diabetes. Collard greens lower cholesterol naturally as its leaves are high in fiber. Fiber lowers cholesterol level by binding with it in the digestive system and inducing its excretion out of the  body. Studies have shown that a natural fiber rich vegetables like collard greens can significantly lower the bad cholesterol(LDL) without reducing good cholesterol or increasing triglycerides.
