Collard greens are cruciferous vegetables (includes kale, broccoli, cabbage etc.) which are good source of Vitamin B1, B6 ad iron. They also contain Vitamin E, protein, magnesium, Folate, Omega Fatty acids and potassium. This vegetable is a staple in many dishes and adds healthy nutrients to any meal. Studies have shown that consumption of high fiber rich diet affects the blood glucose levels in a positive way, particular in those with Type 1 Diabetes. Collard green contains high dietary fiber and antioxidant known as alpha-lipoic acid, which lowers the glucose levels, increases insulin sensitivity and prevent oxidative stress induced by diabetes.   • Lowers Cholesterol

Collard greens lower cholesterol naturally as its leaves are high in fiber. Fiber lowers cholesterol level by binding with it in the digestive system and inducing its excretion out of the  body. Studies have shown that a natural fiber rich vegetables like collard greens can significantly lower the bad cholesterol(LDL) without reducing good cholesterol or increasing triglycerides.

Folate is essential for a healthy nervous system and helps in preventing the risk of certain birth defects such as spina bifida  and anencephaly.
